The Yarden Sauvignon Blanc offers up a bright and aromatic blend of characters; melon, kiwi, orange blossom, fig and light guava notes are all on display. The wine's refreshing character matches its medium body and crisp finish. Sauvignon Blanc is best drunk while still fairly fresh, which is why we recommend drinking Yarden Sauvignon within a couple of years of the harvest. We most enjoy this wine with summery fare, such as ceviche, simply prepared grilled fish or chicken breasts, perhaps in a straightforward sauce of tarragon, lime juice, green chiles and a splash of olive oil. We also find ourselves happily sipping this wine at sushi bars.

The Galilee (or Galil) is the most northern, and generally considered the best, appellation in Israel. The highest quality area within the appellation is the Golan Heights (or simply the Golan), the coldest region in Israel. The vineyards on this volcanic plateau rise from 400 meters (1,300 feet) above sea level to 1,200 meters (3,900 feet) and receive snowfall in the winter. The Golan Heights Winery is located in the town of Katzrin, in the central Golan.
